Fruit Tarts Recipe





Seasonal Fruit Tarts with Lemon, Toasted Almonds and Fresh Nutmeg
Aka, up-dated pop tarts


Serves 10 people

Ingredients

For the Tarts *premade mini or large pie shells will do the trick as well
1 pound all purpose flour
2 teaspoons salt
2 ounces sugar
1 teaspoon baking powder
? pound butter
8 ounces creme fraiche or sour cream
pinch salt

Fresh seasonal fruit; Strawberries, nectarines, blueberries, apples or pears
1 small piece of nutmeg or 1 teaspoon ground nutmeg
juice of one lemon

For the Almond Frangipane Filling
6 ounces brown butter, room temperature
? cup sugar
3 eggs
1 cup almond meal
zest of one lemon
pinch salt


Special Equipment

Parchment or wax paper
Tartlet molds
Rolling pin
Nutmeg grater or micro plane
Cookie cutter or pastry wheel


Instructions

For the Tarts
Chill butter and creme fraiche. Sift dries into a large bowl. Cut cold butter into small pieces and rub into dry ingredients. Mix until the mixture is coarse like cornmeal.

Add creme fraiche and flatted dough into thin disk. Cover with plastic wrap and chill.

Slice the fruit and then toss in lemon juice and season with fresh grated nutmeg.

For the Almond Frangipane Filling
Combine all ingredients until a smooth thick batter is formed. Chill.

To build and bake the croustades, preheat oven to 325°F. Remove dough from refrigerator and place on flour dusted work surface. Roll out to 1/8-inch thick and cut circles large enough to line the tartlet molds. Chill for 15 minutes and fill with frangipane. Top with sliced fruit and bake for about 40 minutes.

To serve
Serve warm with toasted almonds, whipped creme fraiche and salt caramel sauce or brown butter vanilla sauce.

Another day, another dream...





Edna broods over yet another hard day’s work after her hubby arrives back from collecting recyclable plastics off the streets. It was tough work for her as a young girl scavenging off the rubbish tip (seen at far right in the black & white picture below from 1994), but even now, after the tip was closed down seven years ago, the work is still heavy going roaming the streets with a hand-drawn cart for collecting recyclable materials, of which prices have fallen considerably due to the world economic crisis that we all complain about. Plastics that were bringing in almost 10 cents a kilo before the crisis, are now only worth 3 cents. You need to fill a lot of those big bags to make a living, if one can call it that!
But who are they to choose...?

Edna still dreams that one day she will have better living conditions so that her three children can come back home from the shelter they have been living in these last five years, but the courts won't free them as long as there are no basic amenities like running water and a bathroom. None of the shacks here have that luxury.
At 3 cents a kilo, there is barely enough to keep oneself alive..............
